Yield: 6 servings

2

pounds Boneless steak (top round, sirloin or flank)

1

cup Italian salad dressing, divided

12

ounces Large, fresh white Monterey Mushrooms cut in half (about 3-¾ cups)

1

inch lrg Red onion, cut 8 wedges

2

small Zucchini, cut in 1-inch slices (about 2 cups)

8

lrg Cherry tomatoes

Step 1

Marinate steak in 1/2 cup of the salad dressing for 15 minutes. Place in the center of preheated broiler rack or grill. Discard marinade. Cook steak about 5 minutes; turn. Place fresh mushrooms, onion and zucchini around steak. Brush vegetables lightly with Italian dressing. Cook until meat is done as desired and vegetables are tender, adding tomatoes a few minutes before steak is done. Let steak stand for 5 minutes before carving. Toss vegetables in any remaining dressing.
