Cucumber and Chive Spread

Ingredients

8 ounces of low-fat cream cheese
1 small cucumber - diced
2 tablespoons of fresh chives - chopped
Salt and pepper - for taste

Preparation

Let cream cheese soften and mix with chopped chives

Season with salt and pepper.

Add the diced cucumber and gently mix together.

Use as a spread on crackers or between two pieces of bread for a wonderful tea sandwich.
