Potato Kugel

Ingredients

6 potatoes - peeled and quartered
1/2 cup oil
salt

Preparation

Peel potatoes, quarter and place in a large bowl of water

Pulse eggs, onions and oil in a food processor

Dry the potatoes and add to the proccessor

Pulse until liquid

Add salt and pepper

Bake at 400 degrees for 30 minutes, then at 350 for another hour

If you leave the potatoes out in the air for even a few minutes the kugel will get a greyish hue. Tastes fine, but looks old!

Although there are many traditional Jewish potato kugel recipes out there, this is easy and delicious.
