cup Meyer lemon juice (or ΒΌ cup lemon juice with 1 tablespoon sugar) |

Step 1 |
Chop the figs into quarter. Put them in a large bowl and cover with the liquids. Soak the figs in these liquids for at least 24 hours. Drain the liquid except for a few tablespoons. Blend figs and remaining liquid in a food processor until it is a thick paste. |

Use as a topping for bread, crackers or cookies. Goes well with sharp, creamy cheeses.
