lrg fillets of mackerel

50

grams (thick) slice of butter

2

tablespoons sherry or walnut vinegar

1

small handful of chopped dill

Step 1

Put the two fillets of fish in a shallow dish large enough so that they fit comfortably.

Step 2

Dot with butter and pour over the vinegar.

Step 3

Season with finely chopped dill some salt and a few grinds of pepper.

Step 4

Bake in a preheated oven at 200 degrees C/400 degrees F/Gas 6 for 12-15 minutes until the fish has turned opaque and juicy.

Step 5

Eat hot with bread to mop up the juices.

Step 6
