I have had this soup, and let me tell you, it is delicious! A++++! Would eat again and again!

Ingredients

2 teaspoons Olive Oil
3 cloves Garlic, minced
3 cups Vegetable Stock
3/4 teaspoon Salt
3 cans Diced Tomatoes, undrained
2 cups Fresh Basil Leaves, thinly sliced

Preparation

Heat Olive Oil in large saucepan over medium heat.

Add garlic and cook for 1 minute, stirring constantly.

Add broth, salt and tomatoes.

Bring to boil, then reduce heat and simmer for 20 minutes.

Stir in Basil.

Puree soup in blender.

Garnish with basil leaves.
