Salmon Steaks In White Sauce

Ingredients

2 cups milk
1/4 cup corn flour
1/4 cup corn meal
1/4 teaspoon white pepper
1/2 tspsalt
1/2 cup peanut oil (or some other fat)
2 tablespoons butter
1 teaspoon lemon juice

Preparation

Marinate fish steaks in the milk for 20 minutes.

Mix corn flour, corn meal, salt and pepper in a separate bowl.

Coat fish steaks throughout with flour - cornmeal mixture.

Place fish steakes in the hot peanut oil in a frying pan,.

Fry steaks over medium heat for 3-5 minutes on one side, then 3-5 minutes on the other side until crisp and golden. Place the steaks on a hot serving platter.

Pour off the fat from the pan and replace with butter. Add the sour cream, stir to loosen any dredgings.

Cook for about 5-10 minutes, but do not boil.

Remove the sauce from heat, add the lemon juice and stir; pour over the fish and serve with side dish of boiled potatoes and chard.
