Grandmas Zucchini Bread

About

  • You can cut the cooking time in half to bake this as muffins.
  • I like to reduce the sugar a bit (to about 1.5 cups) and sub in any combination of honey, molasses, or brown sugar instead.
  • I also replaced one of the teaspoons of cinnamon with 1/2 tsp. ginger and 1/2 tsp. cardamom.

    Ingredients

    3 Eggs, well beaten
    2 cups Sugar
    1 cup Oil
    1 tablespoon Vanilla
    2 cups Grated zucchini
    3 cups Flour
    1 teaspoon Baking soda
    1/2 teaspoon Baking powder
    1 teaspoon Salt
    3 teaspoons Cinnamon
    Nuts, optional

    Preparation

    1
    Mix first five ingredients, then add remaining ingredients. bake for 50 - 55 minutes at 350 in 2 large or 1 large and 1 small loaf pans Greased and floured. Cool, remove from pans and serve warm. Freezes exceptionally well.
