Edamame Miso Puree

Ingredients

2 cups edamame, shelled
3 tablespoons white miso
2 tablespoons mirin
1/4 cup water

Preparation

Boil edamame for about 7 minutes or until soft

In a blender of food processor, blend all ingredients until smooth

About

This is a quick, delicious and healthy dish. Red miso may also be used in place of white. Excellent served with fish and rice. For added flavor and color, sprinkle furikake on top.
