2

quarts red wine

4

cups sugar

2

cups orange juice

The rinds of two oranges

5

cloves

4

pounds of cherries

[edit] Preparation

Step 1

Simmer on medium the wine, sugar, orange juice, orange rind and cloves until sugar has melted.

Step 2

Add the cherries and simmer until soft, but not mushy.

Step 3

With a slotted spoon scoop out the cherries and place them into sterilized jars.

Step 4

Continue to reduce the syrup until it thickens.

Step 5

Add juice to the jars and process for 20 minutes in boiling water.

Step 6

Remove jars from water and set aside.

These cherries are delicious with both savory dishes (such as grilled duck breast or pork loin), and sweet dishes (on top of ice cream). There will be extra syrup, which is excellent to jar all on its own. Drizzle it on desserts, fruit, or add a splash to a cocktail.
