Port and Garlic Chicken
Heat some olive oil in a pan. Add the garlic cloves and cook on low until lightly caramelised.
Season the chicken with salt and pepper, add to the pan and fry until browned on both sides.
Pour the port over the chicken and set it aflame. Once the flame dies down, cover, lower the heat and continue cooking.
When done halfway through, remove the lid and turn up the heat. Cook until the port has reduced to a syrupy sauce and the chicken is completely cooked through.
