pound top round beef, trimmed of all visible fat |

cups fresh broccoli florets |

cup thin strips of carrots |

sm. onion cut in 6 to 8 wedges |

Step 1 |
Slice beef in strips (across grain i.e. across the narrow width). Mix 2 tablespoons water with soy sauce and cornstarch in small bowl. In 10 inch skillet, heat 1 1/2 teaspoons oil. Add vegetables and stir fry 2 minutes until broccoli is bright green. Reduce heat to low, add remaining 2 tablespoons water, cover and simmer 1 minute. Return beef to skillet. Stir in soy sauce mixture and add to skillet. Cook stirring constantly, until thickened, about 1 minute. Sprinkle with pepper and serve. Makes 2 servings. 359 calories per serving. |
