Flaxseed Muffins

Ingredients

1 1/4 cups Unbleached flour
3 cups Ground flax seed
1 tablespoon Baking powder
cup Light molasses
3/4 cup Soy milk
2 tablespoons Olive oil
1/2 cup Egg substitute, or 1 egg
Optional: raisins or other dried fruits

Preparation

Preheat oven to 350 degrees F. Mix all ingredients together in a large bowl. If batter seems dry add a little more soy milk.

Coat a muffin tin with vegetable spray. Fill each cup 3/4 full and bake for about 18 minutes, or until a toothpick inserted in the center of one comes out clean.

Cook's Note: I use blackstrap molasses as I like the taste.
