White Chocolate Chunk and Macadamia Cookies

Ingredients

150 grams unsalted butter, room temperature
1/2 cup caster sugar
1/2 teaspoon all spice
1/4 teaspoon cinnamon
1 egg, lightly beaten
2 tablespoons milk
1 teaspoon vanilla extract
1 teaspoon baking powder
150 grams white chocolate, roughly chopped
1/2 cup macadamia nuts, roughly chopped

Preparation

Preheat your oven to 180C

Grease and line 2 large baking sheets.

Cut the butter into cubes, then in a large bowl, cream it with the sugar, allspice and cinnamon.

Beat it until its light in colour and fluffy in texture, this will take about 10 minutes.

Then lightly beat in the egg, milk and vanilla.

Sift together, in a separate bowl, the plain flour and the baking powder.

Sift this again over the creamed butter and sugar and bring together by stirring well with a wooden spoon.

Throw in the chopped white chocolate & the macadamias.

At this stage the dough will be a little dry so knead it lightly to pull it together nicely.

With your hands roll golf sized balls of the dough then flatten them out into discs with your palms.

Place them onto the baking sheet, then into the oven for 10 -12 minutes.

You can rotate the baking sheets half way through so that they colour evenly.

Once lightly golden, remove them from the oven and using an egg flip transfer them to cooling racks.

The cookies will harden up a lot upon cooling.

After about 20 minutes on the racks they will be ready to eat ♥
