pound Mahi-Mahi Fillets, cut into 1" chunks

¾

pound Sea Scallops, washed and patted dry

1

cup Snow Peas, trimmed

1

cup Bamboo Shoots

¼

cup Olive Oil mixed with 2 tsp. Sesame Oil

3

tablespoons Soy Sauce

3

tablespoons White Wine

1

tablespoon Balsamic Vinegar

1

teaspoon Hot Pepper Sauce, or to taste

Salt - to taste

Freshly-ground Black Pepper - to taste

Flour for dredging fish chunks

Step 1

While wok is preheating, separately dredge all Mahi-Mahi chunks and Scallops in flour (remove excess flour). Add olive oil/sesame oil mix to wok and stir-fry snow peas and bamboo shoots (1 minute or less); remove and drain. Add hot pepper sauce to oil, along with white wine and vinegar and fry Mahi-Mahi (3-4 minutes) stirring all the time; add Scallops and fry (1 minute). Remove and drain on paper toweling. Serve hot, mixed with snow peas and bamboo shoots.
