pound Mahi-Mahi Fillets, cut into 1" chunks |

pound Sea Scallops, washed and patted dry |

cup Snow Peas, trimmed |

cup Bamboo Shoots |

cup Olive Oil mixed with 2 tsp. Sesame Oil |

tablespoons Soy Sauce |
3 |
tablespoons White Wine |

tablespoon Balsamic Vinegar |
1 |
teaspoon Hot Pepper Sauce, or to taste |

Freshly-ground Black Pepper - to taste |

Step 1 |
While wok is preheating, separately dredge all Mahi-Mahi chunks and Scallops in flour (remove excess flour). Add olive oil/sesame oil mix to wok and stir-fry snow peas and bamboo shoots (1 minute or less); remove and drain. Add hot pepper sauce to oil, along with white wine and vinegar and fry Mahi-Mahi (3-4 minutes) stirring all the time; add Scallops and fry (1 minute). Remove and drain on paper toweling. Serve hot, mixed with snow peas and bamboo shoots. |
