Recipe: Greek Fried Cheese edit

pound Kafalotyri or Casseri cheese |

inch Cut 4 oz. slices |
|
Ice water with cubes |
½ |
cup Flour |
¼ |
pound Butter |
2 |
Lemons cut in half |

Step 1 |
Put cheese in bowl. Cover with water & cubes, & refrigerate 1 hour or until very cold. Keep cold until frying. Remove 1 slice at a time, pat dry. Flour both sides & shake excess. Add immediately to skillet with 2-3 Tbls. sizzling butter, & fry quick. Sprinkle with lemon juice & a few drops of cognac. Ignite & serve as soon as flame dies. |
