Cheesy Crustless Ham, Mushroom and Spinach Quiche

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

1 large shallot, thinly sliced
1 cup mushroom , minced
2 cups spinach, rough chopped
1/2 cup low fat milk
1 tablespoon flour
1/2 cup ham , cubed
1 teaspoon thyme
salt and pepper to taste

Preparation

Heat non-stick skillet over medium heat and spray with cooking spray. Saute shallot and mushrooms 5 minutes until tender.

Mix eggs, egg whites, milk and flour.

Spray baking dish with cooking spray and layer mushroom and onion, ham, spinach, thyme and mozzarella.

Pour egg over mushroom mixture and bake 40 – 50 minutes until toothpick comes out clean and egg is set.

I love this time of year. All the holiday cheer puts me in the best mood! Last night I wanted to get some decorating time in, so I decided to make an easy, cheesy dinner that could cook itself while I decorated.

You can’t beat eggs if you’re trying to save some time, and a crustless quiche not only saves you time, it saves you a ton of calories. You won’t miss the crust with all the lovely ingredients in this quiche.
