Flat Iron Steak Al Forno

Ingredients

4 inches well-trimmed beef Flat Iron steaks, cut 1 thick (about 1-½ pounds)
2 large cloves garlic, minced
1/2 teaspoon pepper
Salt

Preparation

Combine thyme, garlic and pepper; press evenly onto beef steaks.

Place steaks on grid over medium, ash-covered coals. Grill, uncovered, about 13 to 17 minutes for medium rare to medium doneness, turning occasionally. During last 2 minutes of grilling, sprinkle with cheese. Season with salt, as desired.
