-pound frying chicken (disjointed, skinned)

2

tablespoons salad oil

1

small onion, sliced

2

garlic cloves, chopped

1

tablespoon sesame seeds

¼

teaspoon cinnamon

3

tablespoons chili powder

1 ½

cups chicken broth

2

tablespoons peanut butter

2

tablespoons raisins

1

ounce unsweetened chocolate (optional)

Salt, to taste

Step 1

Brown chicken parts in oil in a large covered frying pan. Remove and set aside.

Step 2

Add onion to pan and saute until golden brown. Stir in garlic, sesame seeds, cinnamon and chili powder. Cook, stirring, over medium heat for 1 minute.

Step 3

Add chicken broth and stir to incorporate browned bits in bottom of pan. Pour into a blander or food processor. Add peanut butter and raisins (and chocolate).

Step 4

Process to a smooth puree. Return sauce to frying pan. Season with salt, if necessary.

Step 5

Add chicken parts (except the breast) and simmer, covered, for 15 minutes.

Step 6

Add breast pieces and simmer 10 to 15 minutes, or until chicken is tender. Serve with steamed rice flavored with minced bell pepper.

Step 7

Serves 4.
