Yield: 4 servings

grams main crop potatoes scrubbed

tablespoon olive oil

Step 1

Heat the oil in the small roasting tin.

Step 2

Slice the potatoes into fingers about eight for each potato and toss in the oil. Sprinkle on a little salt.

Step 3

Hang the tin from the top set of runners in the roasting oven.

Step 4

Cook for half an hour.

Step 5

Stir round to recoat with the oil.

Step 6

Cook for a further 20 to 30 minutes move the tin down the ovenif they are browning too much.

Step 7

The cooking time will vary according to the type of potato used.

Step 8

Serve with turkey burgers grilled meat or fish.

Step 9

Sprinkle with sea salt before serving.

Step 10

These are a cross between baked potatoes and shopbought ovenchips. They have a good flavour and can be as crispy as you like.
