Spicy Potatoes Au Gratin

Ingredients

2 pounds red potatoes peeled & thinly sliced
1 teaspoon sea salt
1 1/4 cups heavy cream
2 cloves garlic minced
3 inches chipotles adoba sauce
1 1/2 teaspoons adoba sauce
2 tablespoons chopped chives
1/4 teaspoon dried oregano

Butter a 13x9 baking dish & set aside.

Put the potatoes & salt in a pot- cover with water and boil for 8-10 minutes until slightly tender. Remove from heat and drain into a colander. cool slightly.

In a blender, combine peppercorns, cream, garlic, chipotles, adoba sauce and puree until smooth. mix the manchego with the chives & oregano -set aside

Arrange 1/3 of the potatoes in a baking dish. Pour 1/3 of the cream mixture evenly over the top and sprinkle with 1/3 of the cheese mixture. repeat twice with the remaining cheese, sauce & potatoes. Cover with foil & bake for 30 minutes until the potatoes are ender, uncover and bake an additional 20-25 minutes or until the top is golden brown.
