cup granulated sugar

cup vegetable shortening

eggs, slightly beaten

tablespoons fresh lemon juice

3

cups sifted all-purpose flour

3

teaspoons baking powder

½

teaspoon salt

1

teaspoon ground nutmeg

1

cup milk

1 ½

cups confectioners sugar

tablespoons fresh orange juice

2

tablespoons grated orange peel

3

tablespoons confectioners sugar

2

tablespoons orange peel, grated

½

cup unsalted butter, softened

Step 1

Preheat oven to 350 F. In a large bowl, cream the sugar, shortening, eggs, and lemon juice. In a separate bowl, sift together the flour, baking powder, salt, and nutmeg. Add the flour mixture to the creamed mixture, alternately with the milk, beating well after each addition.

Step 2

Fill greased muffin cups 2/3 full and bake for 20 to 25 minutes. Remove and brush the warm baked muffins with the Orange Glaze. Serve with the chilled Orange Butter.

YIELD: 24 MUFFINS

Orange Glaze:In a small bowl, stir together all of the ingredients until well blended.

Step 5

Makes 1 1/2 cups.

Step 6

Orange Butter:In a small bowl, mix together all of the ingredients until well blended.

Step 7

Chill

Step 8

Makes 1/2 cup.
