pounds (900 g) fresh asparagus, washed and trimmed

4

tablespoons (60 ml) butter

2

tablespoons (30 ml) lemon juice

Salt and freshly ground pepper to taste

Step 1

Steam the asparagus until tender but crisp, about 10 minutes, and plunge into cold water to stop the cooking and set the color. Melt the butter in a small saucepan and stir in the lemon juice, salt, and pepper. Chill the asparagus and pour the lemon butter over them prior to transporting.

Step 2

Serves 8 to 10.
