pounds (900 g) fresh asparagus, washed and trimmed |

tablespoons (60 ml) butter |

tablespoons (30 ml) lemon juice |

Step 1 |
Steam the asparagus until tender but crisp, about 10 minutes, and plunge into cold water to stop the cooking and set the color. Melt the butter in a small saucepan and stir in the lemon juice, salt, and pepper. Chill the asparagus and pour the lemon butter over them prior to transporting. |
