Recipe: Spinach And Egg Casserole edit

(10 oz.) pkgs. frozen, chopped, cooked, drained spinach

tablespoons butter

1

teaspoon salt

1

slice bacon, cut in 1" lengths

1 ½

cups milk

Dash Tabasco sauce

1

cup fresh bread crumbs (2 slices)

cup flour

2

hard cooked eggs, peeled

sliced

cup grated cheddar cheese

Step 1

Melt butter in saucepan, blend in flour, salt and Tabasco. Add milk slowly and heat, stirring constantly until sauce is thickened (about 3 minutes).

Step 2

To assemble casserole: Butter a 6 cup baking dish, then layer the ingredients this way: 1/2 of the bread crumbs, 1/2 of the spinach, 1/2 of the egg slices, 1/3 the sauce, 1/2 the cheese, remaining spinach, remaining egg, 1/3 the sauce, remaining cheese, remaining sauce, and remaining crumbs. Arrange bacon pieces on top. Bake, uncovered in a 350 degree oven for 40 minutes or until bubbly and browned. 4 servings.
