kg of boiling chicken.

lrg onion.

bay leaf.

lt of white table wine.

grams of sweet potato (jams)

sprg of parsley.

kg spinach.

Salt and ground black pepper.

½

glass of extra virgin olive oil.

Some grains of black pepper.

Step 1

Chop the boiling chicken in small pieces, wash it well and sprinkle with salt and pepper. Place the meat, the oil, the bay leaf, the chopped onion and the grains of pepper in a large pan. Heat on a medium flame. When the meat is browned, add the wine and heat until it is reduced. Cover with hot water and leave to cook. Separately, boil the spinach and drain it well.

Step 2

Place in a frying pan with a little oil, the sweet potato cut in cubes and the sliced bananas. Fry gently until the banana is browned. When the boiling hen is cooked and tender add the mixture from the frying pan and the parsley. Boil for 10 minutes, stirring to avoid it sticking to the bottom of the pan. Add salt to taste. Serve hot.
