Ingredients
1 kg
potatoes
peeled and cut into chunks
125 mls
milk
125 mls
double cream
100 grams
butter
4050 saffron filaments
Preparation
1
Boil
the potatoes in
salted
water until tender then drain well.

In a small saucepan
heat
the milk
cream
butter and saffron.

Once the butter has
melted
remove from the
heat
cover and allow to stand for at least 20 minutes.

Mash
the potatoes well then add the saffron mixture.

Mash
again adding
salt
and pepper to
taste
.

Serve
piping
hot.
