Coq Au Vin - Slow Cooker Method
5 slices bacon, diced
1 green bell pepper, julienned
2 carrots, sliced
4 pearl onions, quartered
1 (8 oz.) button mushrooms, sliced
6 red potatoes, quartered
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chicken broth
3/4 cup red wine
In a large skillet cook the bacon and green onions until the bacon is crisp.
Drain well and add in the chicken breast. Brown the chicken on both sides. Set aside.
Put the green peppers, carrots, onions, mushrooms, potatoes and garlic in the slow cooker.
Add in the chicken and layer the crispy bacon and onions on top.
Mix in the spices and pour in the chicken broth.
Cover and cook on high for 3 hours.
Pour in the red wine and cook for another 30 minutes to an hour.
