Step 1 |
In a large bowl, beat eggs until light & fluffy. Beat in sugar, pudding mix and mix until smooth. Stir n half & half & coconut. Pour into ice cream canister. Freeze in ice cream maker according to manufacturer's directions. |

Makes 2 quarts. |
Step 3 |
Cook's Notes: coconut is optional, do not attempt to make this with lemon pudding. Uses uncooked eggs. |
Step 4 |
Use other pudding flavors to make ice cream (except for lemon). My son won Grand Champion in 4H with this recipe (chocolate ice cream) |
