Ingredients

6 ounces fresh ginger
1/4 cup light-brown sugar - (firmly packed)
Juice of 1 lemon

Preparation

Combine ginger, brown sugar, and 6 cups water in a medium saucepan. Bring to a boil over high heat, and reduce to a gentle simmer. Cook until reduced to 4 cups, 30 to 40 minutes.

Add lemon juice. Strain, and serve piping hot.
