Seared Scallops

Ingredients

12 plump scallops

Preparation

Heat a heavy frying pan until very hot (this can take up to 5 minutes).

Add 2 tbsp oil and heat for a minute or so until smoking.

Put in the scallops and sear on one side for 1 minute then turn and cook until done about 1 minute depending on size. Season with salt and pepper and serve on warm plates with the pan juices.

Serve with a salad of floppy lettuce dressed in a little dijon mustard some olive oil and red wine vinegar.
