cup butter

2

tablespoons vegetable oil

1

onion, minced

3

pounds yellow squash, thinly-sliced

4

cups chicken broth

1

cup 2% lowfat milk

1 ½

teaspoons salt

½

teaspoon white pepper

Step 1

Combine butter and oil in large Dutch oven. Add onion and garlic; saute until tender. Stir in squash and chicken broth; cover and simmer for 15-20 minutes or until squash is tender.

Step 2

Spoon 1/3 of the mixture into a blender and process until smooth. Repeat with remaining squash mixture.

Step 3

Return mixture to Dutch oven; stir in milk, salt and pepper. Cook over low heat, stirring constantly until well-heated.
