Recipe: Cream Of Squash Soup edit
A perennial Christmas favorite!

tablespoons vegetable oil |

onion, minced |

pounds yellow squash, thinly-sliced |

cups chicken broth |
1 |
cup 2% lowfat milk |
1 ½ |
teaspoons salt |
½ |
teaspoon white pepper |

Step 1 |
Combine butter and oil in large Dutch oven. Add onion and garlic; saute until tender. Stir in squash and chicken broth; cover and simmer for 15-20 minutes or until squash is tender. |
Step 2 |
Spoon 1/3 of the mixture into a blender and process until smooth. Repeat with remaining squash mixture. |
Step 3 |
Return mixture to Dutch oven; stir in milk, salt and pepper. Cook over low heat, stirring constantly until well-heated. |
