cups Dry white wine

ounces Butter

cup Flour or Butter roux

tablespoons Corn starch

tablespoon Worcestershire sauce

½

tablespoon Tabasco sauce

tablespoon Black pepper

tablespoon Celery salt

1 ½

pounds Sonoma Hot Pepper Jack

pound Sonoma Garlic Jack

ounces Sonoma cheddar

Step 1

Bring milk to a boil; add flour. Stir constantly. Add wine and corn starch, stirring constantly. Add remaining ingredients. Keep heat low; cook just til cheese melts.
