Edamame Puree With Horseradish

Ingredients

1/2 cup edamame, shelled
1/2 teaspoon kosher salt
1/2 teaspoon sugar
1 teaspoon ushukuchi (light soy sauce)
1/2 cup horseradish, peeled and finely chopped
1/2 cup water

Preparation

Bring a large pot of water to boil

Prepare ice water bath in a large mixing bowl

Blanch edamame for 30 seconds, scoop out and toss them into the ice water bath

Drain and set aside

Transfer to a blender and add salt, sugar, soy sauce, horseradish and water (add more water as necessary)

Process on high until very smooth.
