Roasted Aioli Pearl Potatoes

Ingredients

1/4 cup olive oil
1/4 cup butter, melted
2 tablespoons fresh garlic, minced
2 tablespoons fresh parsley, chopped
1 teaspoon fresh basil, chopped
Salt and pepper to taste
Parmesan cheese, for garnish
Fresh parsley, for garnish

Preparation

Halve potatoes; set aside.

In a large bowl, combine the next seven ingredients (olive oil to salt and pepper).

Add potatoes and toss.

Next, place potatoes in a roasting pan, uncovered, and roast at 350 degrees for about 30 minutes, stirring often.

Once potatoes are cooked, remove from oven and garnish with Parmesan cheese and parsley.
