Oatbran - Flax Muffins

Ingredients

1 1/2 cups Unbleached AP Flour
3/4 cup Flaxseed Meal
3/4 cup Oatbran
1 cup Brown Sugar
2 teaspoons Baking Soda
1 teaspoon Baking Powder
1/2 teaspoon salt
2 teaspoons Cinnamon
1 1/2 cups Carrots, peeled & grated, (about 2 medium)
2 Apples, peeled & grated
1 cup Raw Walnuts, chopped
3/4 cup Milk, 2%%
2 Eggs, beaten
1 teaspoon Vanilla

Preparation

Preheat Oven to 350.

Mix together dry ingredients, from flour to cinnamon in a large bowl

Stir in grated carrots, apples and chopped nuts

Pour liquid ingredients into dry ones.

Mix gently, until just moistened.

Do not overmix.

Fill muffin cups 3/4 full

Bake muffins at 350 for 18-20 minutes

Bake a small loaf for about 40-45 minutes

These are delicious, nutritious, high in fiber and omega-3! I did not have any oatbran, so I took my multigrain, oatbran cereal and ground it up in the food processor. You can substitute any nuts you have on have on hand for the walnuts. I like to make mini muffins and a small loaf that can be frozen for later.

Yield:

15 medium muffins or 12 mini and a small loaf
