Smokey "Fried" Creole Turkey Salad

Ingredients

3 cups smoked holiday turkey shredded
Turkey Skin (yes that's right)
½ c. diced pecans
½ c. mayonnaise
1 tsp. pepper
1 tsp. creole seasoning
½ tsp. garlic powder
½ tsp. onion powder
¼ c. green onions
¼ c. white onions
8 slices of country bread
8 slices tomato
8 slices of romaine lettuce
2 tbsp extra virgin olive oil

Preparation

In a large bowl mix shredded turkey with pecans, mayonnaise, onions, creole seasoning, pepper, garlic powder, onion powder and set aside.

Fry turkey skin in hot oil until crisp.

Drain turkey skin then dice into small pieces.

Add to turkey mixture, stir and serve.
