Yield: 4 servings

large Potatoes, grated or shredded |

eggs, well-beaten |
1 ½ |
tablespoons Flour |
¼ |
teaspoon Baking powder |
1 ½ |
teaspoons Salt |
1 |
small onion, grated |
to taste salt |

to taste pepper |

teaspoons paprika |

cup cooking oil |

Step 1 |
Mix above ingredients well in a large bowl. |
Step 2 |
Take a 1/4 cup of the potato mixture and make a pancake in between two sheets of wax paper. Set aside. Continue making cakes with the rest of the mixture. |
Step 3 |
Add cooking oil to a large saute pan. Once pan is hot add pancakes, two at a time. |

This makes about 12 (3 inch) cakes. Good served with applesauce.
