Recipe: Fig and Honey Pudding edit

grams soft dried white figs, chopped |

cup caster sugar |

grams fresh white breadcrumbs |

finely grated zest of 1 orange |

teaspoon bi-carbonate of soda |

teaspoon cinnamon |

teaspoon nutmeg |

eggs, lightly beaten |

grams butter, melted |

tablespoons honey |

Step 1 |
1. Grease a pudding bowl with butter and place a circle of Glad Bake in the base of the bowl. |

2. Place figs into a mixing bowl with the breadcrumbs and orange. Sift together the bi-carbonate of soda and spices and add to fig mixture and stir together. Add remaining ingredients and mix well. |

3. Place mixture into prepared bowl and cover with a circle of Glad Bake and a circle of foil, secured with string. Place pudding into a large pot and pour in enough boiling water to come halfway up the sides of the bowl. |
Step 4 |
4. Place pot on heat and bring to the boil, then reduce heat to constant simmer for 2 hours, adding more boiling water if necessary. When ready to serve, remove pudding and discard paper and foil. Unmould onto a serving plate and accompany with custard. |
