Grilled Sweet Potato and Green Onion Salad

Ingredients

1/4 cup olive oil
Dressing
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon cider vinegar

Preparation

Boil the sweet potatoes for 20 minutes. Drain and cool completely.

Cut into 3/4" slices and brush with oil.

Grill until they brown about 10 minutes, add onions for 4 minutes.

Cut potatoes into cubes and onions into slices.

Prepare Dressing.

Toss vegetables with dressing and serve over mesclun greens.

Dressing:Whisk mayonnaise, mustard, honey, vinegar, salt and pepper.
