pounds boneless lamb cut into 1" pieces

cup long-grain rice

pound potatoes sliced

onions sliced

teaspoon salt

teaspoon freshly-ground black pepper

teaspoon ground cumin

pound zucchini sliced

pkt artichoke hearts - (12 oz) thawed, halved

2

cups diced tomatoes

Step 1

Place sliced potatoes in the bottom of a slow cooker. Layer remaining ingredients on top. Pour 2 cups of water over all. Cover and cook on LOW for 8 to 10 hours.
