c. butter

c. white sugar

1

tsp. vanilla

1

tsp. salt

c. quick oatmeal

1

c. brown sugar

2

eggs

1

tsp. baking soda

1 ½

c. flour

½

c. nut meats (optional)

tbsp. butter

½

tsp. cinnamon

2 ½

c. powdered sugar

1

tbsp. cooked coffee

A little cream or milk

Step 1

Cream butter and sugars; add eggs and blend well. Add vanilla. Add flour, soda, and salt to mixture and add uncooked oatmeal. Add nuts and mix well. Shape into 2 rolls, about 12 inches long and 1 1/2 inches thick, using another 1/2 cup of flour. (It is easier to shape rolls if chilled 1 hour first.) Chill rolls overnight. Slice and bake at 350 to 375 degrees for 8 to 10 minutes. Frost while still warm with cinnamon coffee frosting. Makes approximately 75 cookies.
