Friendship Bread Another Starter

Ingredients

1 cup sugar
cup warm water
2 scant Tablespoons dry yeast or 2 small packages of yeast

Preparation

Sprinkle 1 Tablespoon sugar over warm water, sprinkle yeast over this and let stand for 10 minutes, until bubbly.

Mix milk, sugar, flour and yeast mixture. Cover loosely and keep in a warm place for 1 day and one night. Store in refrigerator in a loosely covered container. Stir once a day for five days.

Now it is feeding time for Herman.

Remove starter from refrigerator and add: 1 cup all purpose flour1 cup milk1/2 cup sugarStir once a day for four more days, while storing in the refrigerator. Herman is ready to use on the tenth day.

When using this starter, remember to replenish by using the feeding amounts to keep it going. Herman will continue to work if you take care of it as directed above.

About

When making sour dough bread, in order to get the true sour taste you need to create a mother dough. Either get a cup of starter from someone who has a batch going or, make or buy some unpasturized plain yogurt. Add some of this to your starter the first time. This will enhance the flavor of your sour dough bread.
