This recipe came from a book I found at my house called "The Seattle Classic Cookbook." I thought it would be fun to add since it's from a Seattle cookbook and it sounds pretty delicious.

  • 4 cup grated carrots
  • 4 cup grated Cheddar cheese
  • 4 cup chopped celery
  • 4 cup fresh, tiny shrimp
  • 1 cup chopped green onion
  • 2 cup mayonnaise
  • 1 can 1 1/2-ounce shoestring potatoes
  • 1 can 3-ounce chow mein noodles(optional)
  • lettuce leaves
  • chopped parsley(optional)

Step 1

Toss together carrots, cheese, celery, shrimp, green onions, and mayonnaise. Refrigerate overnight.

Step 2

Sprinkle shoestring potatoes or noodles over the salad just before serving.

Serve on a bed of lettuce and garnish with parsley.
