- 4 cup grated carrots
- 4 cup grated Cheddar cheese
- 4 cup chopped celery
- 4 cup fresh, tiny shrimp
- 1 cup chopped green onion
- 2 cup mayonnaise
- 1 can 1 1/2-ounce shoestring potatoes
- 1 can 3-ounce chow mein noodles(optional)
- lettuce leaves
- chopped parsley(optional)
Instructions

Step 1

Toss together carrots, cheese, celery, shrimp, green onions, and mayonnaise. Refrigerate overnight.

Sprinkle shoestring potatoes or noodles over the salad just before serving.

Serve on a bed of lettuce and garnish with parsley.
