½

pound ground round

1

onion, chopped

1

clove garlic, minced

2

tablespoons shortening

1

cup spinach (#2 can)

??? c. spinach juice, add water to make ¾ c

1

can tomato sauce

½

can tomato paste

½

teaspoon salt and pepper

1

teaspoon rosemary

1

teaspoon basil

1

teaspoon oregano

cup bread crumbs

½

cup grated Cheddar cheese

¼

cup salad oil

2

eggs, slightly beaten

½

pound butterfly macaroni

Step 1

Cook meat, onion and garlic in shortening until slightly brown, drain spinach to make 3/4 cup. Add tomato sauce, paste and seasonings to meat. Cook 15 minutes. Add crumbs, add half or 1/4 cup cheese, oil and eggs, salt and pepper the crumbs.

Step 2

Cook macaroni until tender, drain, put a layer of macaroni in large baking dish and a layer of meat sauce on top. Another layer of macaroni and then meat sauce on top. Then 1/4 cup grated cheese. Bake 1 hour at 350 degrees.
