4 lrg Red
onions
, thinly sliced
Salt
& freshly ground
black pepper
Preparation

Melt
the butter in heavy-based pot over a moderate
heat.
Add the onions & cook gently till translucent.
Season
, then cover &
simmer
over a very low
heat
for 20 minutes.
Stir
& transfer to a
warmed
serving
dish
