Sweet Potato Surprise Salad

Ingredients

2 tablespoons of Apple cider vinegar or fresh lime juice
1 teaspoon tamari
1/2 teaspoon fresh ginger, grated
1 cup sweet potato, diced
1 cup cooked red or black quinoa
1/2 cup chives, chopped
2 tablespoons slivered almonds
1 bunch of greens, braised

Preparation

Whisk first 6 ingredients together in small bowl and set aside (double up on the dressing for extra flavor.

Place sweet potato in steamer basket over boiling water and steam 3 to 5 minutes, until crisp/tender.

Plunge into cold water to stop cooking process and pat dry with towel.

Combine sweet potato with cooked quinoa, snipped chives, and almonds and three tablespoons of the dressing.

Toss the braised greens with the remaining dressing.

Arrange the dressed greens on the plate.

Add sweet potato, quinoa mixture.
