Halibut In Basil Broth

Ingredients

2 (4-oz) Pacific halibut fillets
1 clove garlic, thinly sliced
1/2 cup basil leaves
1 tablespoon olive oil
salt and pepper, to taste

Preparation

Pat fillets dry and season each side with salt and pepper.

Heat olive oil in a pan on medium-high heat. Sear fillets on both sides, about 2 minutes per side.

Add sliced garlic ans saute for 30 seconds. Add white wine and chicken stock, and boil for 3 minutes.

Add baby spinach and basil leaves, cooking until the spinach wilts slightly. Serve in shallow bowls, spooning broth over filets.
