  • 1 cup fine-grind bulgur
  • 1 can black beans
  • 1 cup red bell pepper, chopped
  • 2 scallions, chopped
  • 1 can pineapple (8 oz)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon lime juice

Step 1

Add 1 cup cold water to the bulgur; let sit for 30 minutes or until water is fully absorbed.

Drain the beans and pineapple and <a href="/7S3QCKWK">mix </a>with pepper, scallions, vinegar, lime <a href="/QDWRNXYW">juice </a>and bulgur.
