cup chicken broth |

slightly beaten egg yolk |

tablespoons milk |

Step 1 |
In saucepan, melt butter. Add mushrooms; cook over medium-high heat about 5 minutes until tender. Blend in flour. Add chicken broth. Cook, stirring constantly, until thickened and bubbly. Cook, stirring 2 minutes more. Add parsley and lemon juice. |
Step 2 |
Combine egg yolk and milk; stir egg yolk mixture into sauce. Cook and stir over low heat 2 minutes more. Season with salt and pepper. |

Serve with meat. Use vegetable stock to make this sauce suitable for vegetarians and serve with tofu, tempeh or seitan.
