tablespoons butter

1 ½

cups sliced fresh mushrooms

2

tablespoons all-purpose flour

1

cup chicken broth

1

tablespoon snipped parsley

1

teaspoon lemon juice

1

slightly beaten egg yolk

2

tablespoons milk

Step 1

In saucepan, melt butter. Add mushrooms; cook over medium-high heat about 5 minutes until tender. Blend in flour. Add chicken broth. Cook, stirring constantly, until thickened and bubbly. Cook, stirring 2 minutes more. Add parsley and lemon juice.

Step 2

Combine egg yolk and milk; stir egg yolk mixture into sauce. Cook and stir over low heat 2 minutes more. Season with salt and pepper.

Serve with meat. Use vegetable stock to make this sauce suitable for vegetarians and serve with tofu, tempeh or seitan.
