Vegetable Croquettes

Ingredients

3 cups potatoes, medium
1 onions, medium
cup carrots, medium
1 stk celery
cup peas
cup corn kernels
2 teaspoons butter
1 teaspoon fresh herbs (chopped)

Preparation

Peel and cook potatoes in boiing salted water until tender. Mash fine.

Peel and finely dice onions, carrots and celery.

Cook gently in butter until tender.

Combine the potato, onion, cooked mixed vegetables and spices, make spoonfuls into patties, and flatten.

Roll them in egg and coat ith breadcrumbs.

Heat oil in a pan and cook patties on both sides until golden brown.

Serve with freshly made tomato sauce.
